I'm a chicken , salad, and sea food person. I'm tired of chicken and plain fish. I'm tired of potatoes, I need a good main dish that don't take too long.
Is it fair to asked for some quick fix main dishes from the younger ladies. I know, I'll go with potatoe,tomatoe and what ever else in the kitchen to come up w/ a great side dish.
Yep, some green stuff. Probably going to end up w/ a salad.

Rosa, let me suggest something else for you, sis. My family loves a "Shepherd's Pie".
Now mind you, I don't measure anything..............I eyeball ingredients and measurements. I don't own any measuring cups or spoons. But I can tell you, it's supposed to end up looking like a layred pie (much like lasagna).
Here ya go..........
Season some ground beef with garlic, seasoned salt and black pepper. Mix in some chopped celery, green peppers and onions.
While this mixture is browning, you can mix up your instant mashed potatoes. (Some people use regular potatoes that have to be peeled, cooked, seasoned and mashed but it takes longer and doesn't taste any different than instant).
Third, get frozen mixed vegetables (carrots, beans, and corn..........although you can use corn by itself) and bring it to a boil and drain. Because the pie has to be baked you can skip this boiling step if you wish).
When all ingredients are done, get a deep dish baking pan. The ground beef mixture is the first layer. The vegetables are the second layer. Top the layered pie off with the third layer of mashed potatoes.
Bake the dish in your oven until the top has a light brown crust (approximately 375 degrees)...........takes about an hour.
Unlike lasagna, you don't have to wait until it coools down to enjoy it.

Thanks, I've eaten the shepred pie but never made it. I will do ithis my next trip with ground beef, I love one dish meal. LOVE them, CROCK pot, slow cooker,Cassarole all are one my type of meal.
You can see I'm not, have never been a person who stayed in the kitchen except on special days.
I had a friend, once, male friend. My girl friends and I were talking in the yard, he dropped by, and asked me what I was cooking? they looked at each other and started laughing. One of them said, she always have crackers in her house. You have the wrong lady who would cook for you. I felt so bad. but he never ate at my house, we went out to eat.

Gurl, crackers are good, too. they make a great appetizer before you get to go out to dinner.
I stay in the kitchen. I have the blessing of having a mom from the deep south, and a dad from the West Indies. I live on the coast (seafood) amongst a city full of Italians. Thus, I've learned to love and to cook everything that's a favorite of mine.
As for the Shepherd's Pie............it keeps well. If it's just you that's eating, minimize the size and you can also freeze it well.

Yes I agree I always keep crackers in the house. I also keep some prosciutto (italian meat) and my favorite cheese which is a creamy Havarti cheese. Get a nice glass of wine and you have a nice appetizer.
