Got me some of that leftover white rice from yesterday's dinner. Diced some onions, sliced and rinsed some leftover mushrooms, (always leave some mushrooms in the container so you will always have leftover fresh mushrooms!) diced a tomato into some nice chunks, and...let's see....heated my skillet, tossed in a couple spoons of organic Smart Balance until melted, then added the onion & mushroom mix; add salt, pepper and garlic to taste and toss some mo'. Once the mushrooms and onions look like they are cooked, toss in your leftover rice and toss some mo' until heated through. Once it is all heated through, toss in your diced tomatoes and toss some mo'. You're done! Am serving as a side dish with my homemade meatloaf and tossed salad. I know that homemade meatloaf sounds real good:) I would like a little fresh green beans and new potatoes with a hint of bacon in it along with some white rice and gravy from the meatloaf a glass of lemonade and some homemade peach cobbler with a scoop of vanilla ice cream, yeah I think that's what I want:)

With certain meals, I just like to keep it simple. With my meatloaf I just prefer garlic mash potatoes with homemade gravy from the meatloaf drippings and some corn mixed with cream style corn and a tall glass of kool-aid.
