It's a hot summer day. Too hot to cook, you need a cool glass of something cold and good.
Here' a cooler you might want to prepared ahead of time. It's thick and musy tropical cooler, rich thanks to the coconut milk and cream. The other ingredients aren't helpful either, but it is great!!!
MAKES 4 TO 5 LARGE GLASSES
2 T. lemon juicce
1 pineapple
1 C. coconut milk
2/3 cup of double (heavy) cream
1 c. white rum
2-4 tbsp superfine sugar
11/4 lb finely crushed ice
Trim off the top of the pineapple
cut away the core and chop the flesh (Chop, chop, chop) do this and lbs won't be added. smile
put the chop flesh in the blenderw/ the lemon juiceand whizz until it is smooth.
Add the coconut milk, cream,rum,and the sugar. blend thoroughly. taste and add more sugar to your taste. taste!! pack the ice into your glasses and pour the drink over the ice. serve immediately. yummy
Tip--
a great *censored*tail to make ahead of time. blend the drink in advance and chill in a piter. Store the crushed ice in freezer until you're ready for serving as soon as you wish.
